Our Story

At In Pursuit of Pastry, every cake and sweet treat is crafted with heart, creativity and a deep respect for classic pastry techniques. At the helm is Chef Glen Barratt, a renowned Australian pastry chef celebrated for his desserts and commitment to flavour and heritage. Glen has shared his passion for baking at events across Queensland, including creating and sharing cherished recipes like the old fashioned favourite pineapple upside-down cake that connect family traditions with contemporary flair.

Glen’s approach honours time - tested methods and local produce, allowing each cake, croquembouche and celebration dessert to taste as good as it looks. His work reflects both artistic precision and that warm, joyful feeling only exceptional pastry can deliver.
